SETTING: On a boulder-strewn, spot-lit beach, Da Maurizio is located in one of the most romantic settings on Phuket.
FOOD: Chef Aaron Hopper is a master of his metier and Da Maurizio affords him a perfect opportunity to shine. From the amuse bouche of angel hair with saffron and white clam cream to the main dish, milk-fed veal saltimbocca with fresh sage, fontina cheese, parma ham, sauteed arugula and goat cheese mashed potatoes, the master's touch is plain to see - and taste. Pan-seared foie gras with toasted brioche, dates, and fresh mango is an early and sublime delight, as is his Sicilian sausage risotto with caramelised onions and crushed chilli. Concurrent with its location, a generous portion of pan-seared sea bass with sweetcorn, toasted porcini mushrooms, arugula pesto is top-ofthe-
drawer stuff. Given the setting, the availability of good wine and top-notch service, this is modern Italian dining at its best. Superb.
WINE: A consistent winner of the Wine Spectator award, it offers great wines for all palates.
SERVICE: Da Maurizio's service is exemplary and stylish.
