SETTING: Into the Med's open-air terrace, with its view of both Chalong and distant Phang Nga bays, is an absolute must for romantics on starry and especially full-moon nights.
FOOD: Into the Med is Evason Resort's flagship restaurant and it fulfills its role in grand style. Mediterranean seafood platter encompasses pickled vegetables, pesto, melon and prawns with each serving a winner. Following this lightly spiced pan-seared Atlantic salmon with fennel seeds is simply perfect; the texture, preparation, taste and presentation of this dish are incomparable. Into the Med's shellfish risotto is also a success; colourful and succulent, the dish complements the menu perfectly. New Zealand lamb comes with a rich, piquant and sweet pomegranate sauce reminiscent of plums. A generous portion of local sea bass wrapped in parma ham with prawns is also spanking fresh and well worth a try.
