SETTING
Amazingly pristine and everything Indian, with 300-year-old palace doors from Jodhpur, marble floors and resident sitar and tabla players. The tandoori kitchen is on view behind glass windows. Fine dining decor with an Indian theme.
FOOD
One of the owners, Av Khanijou, is a renowned Indian cooking teacher and she went to India to select the cooks, who had to pass her standards first, and then work with her for one month before going into the restaurant kitchen. The menu is informative of Indian history, as well as the cuisine, and covers vegetarian and non-vegetarian items. In fact Indian by Nature has probably the largest vegetarian selection in Pattaya. Pakoras has potato, brinjal, onion, spinach and green chilli in chickpea flour and is very popular. Another starter, kathi roll features chicken rolled in unleavened bread with spices and chutney and is excellent. Dal flambee is an adaptation of the dal fry available at roadside stalls in India, with the addition of many ingredients including mustard seeds (asafoetida) with a dash of cognac and the theatre at the table played out by the restaurant manager.
WINES
Small wine list but covers all major wine-producing countries. Selected to team with Indian cuisine, with most wines at about 1,000 baht.
SERVICE
Apart from the Indian restaurant manager Darryl Gonsalves and owner Av Khanijou, the friendly and accommodating service staff, despite Indian costumes, is Thai, with two months’ training by the owner. The result is fine dining, Indian style.
